I am incredibly thankful I haven’t experienced any sort of awful morning sickness. Haven’t thrown up at all, no idea how I’d deal with that in my sterile little cubicle, it would be so miserable and I feel so bad for those women!
But, my stomach has been quite picky. I used to eat big salads full of veggies every day, whole bowls of steamed broccoli and cauliflower and roasted kale. Now my stomach turns over at the thought of most veggies. All I want is fruit in the morning, and then carbs carbs and more carbs. Bread, granola, pasta, potatoes, etc.
This is our first summer in our house and first year having a garden, which has been doing pretty well. We’ve got lots of kale, zucchini, cucumber, beans, bok choy, peppers and tomatoes on the way. Unfortunately I can’t eat most of it!
So I’ve started experimenting with baking, at least with the zucchini! I dug out my muffin tin, still in it’s packaging from my wedding shower almost three years ago. That’s about how much I bake.

I followed it exactly except used only 3/4 cup of regular sugar and a added couple handfuls of chocolate chips. They turned out delicious and plenty sweet! Walnuts would’ve been great in them too, I’d definitely add them next time along with the chocolate chips.
They were tested and approved by my extended non-vegan junk food loving family up at the cabin, including my husband who doesn’t normally have a sweet tooth!
